Chocolate Courses

Essential Skills for Working with Chocolate 2 Day Course
Cost £295 Time 9am - 4pm


This is our longest running and most popular course.
If you are interested in getting into working with
chocolate or simply wish to expand your range of culinary
skills this course provides the ideal introduction to working
with chocolate and is perfect for people with little
or no previous experience.

After an Introduction to cocoa and the history of
chocolate, you will learn the different ways to temper
chocolate and how correctly handle and work with chocolate

As well as covering chocolate dipped items and some work
on moulded figures, the course, through demonstration
and hands on work will teach you how to:

* Make soft centres
* Make flavoured ganache
* Produce moulded chocolates and create a range of truffles
* Work with coloured chocolates

The course will also briefly discuss packaging, machinery
and some of the legal requirements for making
and selling chocolates.

Chocolate Artisan Course 1 Day Course
Cost £165 Time 9am - 4pm


This is an ideal follow on from the 2 day essential skills
programme, as this course goes into much more detail
on flavourings and non moulded chocolates. For a creative
and unique feel to your chocolates, you will experiment with
unusual flavours such as Tonka, gianduja truffles, juniper
berry, chilli, herbs and spices and many more.

Although there will be some hands on time during
this course, it is predominantly demonstration based in
order to ensure that you get the most out of the
course and take with you as much information
and as many ideas as possible.

The course content will aloow some time for a
"questions and answer session" in order to help you
with any problems you have encounted while working
with chocolate and practising techniques.

Chocolate Wedding and Celebration Cakes 1 Day Course

This is another of our popular courses. With the increase in
demand for chocolate wedding and celebrations cakes,
it is important to learn the necessary skills for creating
thses hugely popular style of cakes from. This covers many
aspects of creating wedding and celebration cakes from chocolate.
You will learn the correct way to coat a cake and different
style of decoration including:

* Chocolate curls and ·cigarettes·
* Chocolate fans and ruffles
* Coloured chocolate pieces

You will slo learn how to create coloured cocoa butter
and how this can be used in decoration. The day finishes
with the chance to experiment with all the techniques
you have learned and create your own unique and
personalised cake. With the skills gained in this course you
will be able to alter and adapt the design to create your
own range of exciting and unique chocolate wedding cakes.

Advanced Chocolate Wedding Cake 2 Day Course
Cost £295 Time 9am - 4pm


Following on from the wedding and celebration cake course,
this course introduces you to the more advanced techniques
in chocolate work. This will include coloured cocoa butter spraying,
and creating individual chocolate cakes and chocolate plaques.
This course will also show you how to deal with ·non-traditional·
chocolate designs such as ·cone shaped· and very modern designs.

As a lot of chocolate work is down to personal interpretation
and design, you will be given the chance to experiment with
the techniques you have learned in order to create your own
unique cake at theend of the end. This course does not cover
tempering in full, so it is advisable that you have previous knowledge
of this skill.

Chocolate Shoe Making

Chocolate shoes have been one of the most successful introductions
in our shop in recent months. During this six hour workshop, you will
learn how to create and decorate these popular items. You will use
moulds to create the shoes and learn a variety of techniques including
piping and use of colour and luster effects. you will be able to make
two pairs of ladies shoes, completely finished, to give as gifts....

to experiment, design and create your own individual showpiece,

You will learn how to use patterned transfer sheets and textured perspex sheets

The Essential Slattery Chocolate Experience

We have received lots and lots of requests for a more in-depth
chocolate courseand so here it is.... The Essential Chocolate
Experience - a 5 day course of nothing but working with chocolate.

This course will ideally suit the person with little or no experience
of working with chocolate, as it will start from the very basics.
You will learn how to correctly temper the chocolate using a
variety of different methods, you will come familiar with the ways
to handle and work with chocolate as well as receiving 'Tips & Hints'
on quicker, tried and tested methods that the professionals use.

The course will allow you to gain hands on experience of working
with moulds in order to create small moulded chocolates as well
as larger chocolate figurines and decoration pieces. You will create
a range of fillings including ganaches and fondants as well as
pralines etc.

The course will cover making a large variety of hand-finished
chocolates including truffles, rochas, pretzels, knackerli and
hand dipped pralines, which are all quick and easy to produce
- when you know how!

You will refine your skills and learn about creating chocolates
using more delicate and unusual flavours. Imagine being able to
use herbs and spices to create exotic tasting chocolates
including coriander, lavender, cardamom, juniper and even curry.

One of the most important things you will learn is how to create
individual and personalised chocolates - a must if you intend to set
up in a professional business.

We will devote a good amount of time to the cutting, shaping
and creation of chocolate cakes and decoration pieces. You will
learn how to coat cakes with chocolate and coating sauces that
could be used for birthdays, weddings, or simply as an
extravagant dessert. By the end of the course you will be able
to create chocolate "cigarillo" curls, ruffles, shards and fans
- all of which can be used to create elaboratley
decorative cakes or can be used as decoration on tortes and gateaux.
By learning how to colour cocoa butter and spray chocolate you will
be able to achieve highly unusual and striking effects.

Some tome will be devoted to the fundamentals of running a
successful chocolate business. This will cover packaging ideas and
sources, legal requirements for labelling and selling products as
well as getting the most from your products by learning
effective display methods.

By covering elements from all our popular chocolate courses you
will take away a rounded working knowledge of chocolate. You will
also learn techniques and receive information on ideas that are

Sugar Paste Courses

Novelty Character Modelling 1 Day Course

This course is a great introduction to the techniques and methods for
sugar paste modelling. Learn how to correctly handle sugar paste, use
brushes and successfully blend and assemble your models and how to use
modelling tools to add details to them.

You will create several popular childrens character models and learn to
improve the look of your characters by placing them in a 'scene' and adding
the details that 'brings them to life'. A great introductory course into
working and using sugar paste.

Human Figures - 2 Day Course

This 2 day session offers an in depth introduction to creating
'caricature' and 'moulded' human figures. Your expert cake
decorator will take you through creating all different styles of
human figures. You will learn how to create seated figures,
standing figures and creating realistically posed figures too.
If you have tried, you will know that it is quite difficult to make
your figures look the correct age. This course will take you through
creating babies, toddlers, children and adults of various ages,
showing you the tricks used to age them accordingly.

You will be shown how to give your characters poses and
expressions and how to add life to your figures by creating
realistic looking clothing.

This is a great course to really allow you to practice creating
figures while getting lots of tips and advice from our expert
cake decorator. You will leave this course feeling confident that

Creating Shaped Cakes - 1 Day Course
Cost £140.00 Time 9.00am - 5.00pm


Take the worry out of creating shaped cakes as we take you through
the whole process, starting with cutting, carving and layering your
sponge cake. We will show you how to add features and details in sugar
and the correct way to assemble the cakes.

Your cake decorating tutor will also offer 'top tips' on decorating the
cakes in order to achieve the best, most realistic results.

During this hands on course you will create your own shaped cake from
start to finish, with expert guidance.

We will cover making popular children's character shaped cakes on the
May 2010 and January 2011 courses. You will be shown the basics of
shapong the body and head of the characters and then will be given the
choice of different characters to create. You will be taken through step-by-step,
until you have a perfect 3-D shaped character cake.

The September 2010 and March 2011 course will focus on creating
handbag shaped cakes. This is a style of cake that is incredibly popular and
once you have mastered the basic shaping and decorating skills,
you will be able to create a whole range of different handbags designs.

On the December 2010 and June 2011 course the focus will be on creating
realistic and detailed car shaped cakes. This too is an incredibly versatile and
popular shape of cake that is suitable for children and adults alike.

Creative Cup Cakes 1Day Course

Cup cake are one of the most popular trends of the last couple of years,
but what makes cup cakes so popular? Thye make the perfect dessert,
they are small emough to eat by yourself but big enough to satisfy
a craving for something sweet. They can be plain or fancy, casual or formal,
crazy coloured or pristine white. Perhaps it is the versitility of a plate
of cup cakes. Suitable for a midmorning coffee break, birthday party
or even a wedding reception, cup cakes are always welcome.

This one day course provides a simple introduction to cake
decoration. The course will start with how to handle sugar
paste, how to cover a cake with it and crimping techniques
to add simple decoration. The tutor will demonstrate the
techniques for coating a cake with royal icing. The course
will then move onto decorative piping, writing and lettering
techniques - including plenty of time for practise! You will
then learn how to make sugar roses and sugar garret frills
to decorate your cakes with.

The day will culminate in putting all your new skills into
practise and creating your own beautifully decorated
cake to take home with you.

Creating Sugar Flowers 1 Day Course

Welcome to the world of sugar flowers. Let our expert cake decorator
teach you how to make sugar roses, flowers made with plungers and
cutters and an introduction to some simple wired flowers and leaves.
You will use a variety of cake decorating tools and various techniques
to make your sugar flowers, from which you will assemble your flowers
into a cake decoration you will be proud of.

Essential Sugar Craft Experience - 5 Day Course
Cost £695 Time 9.00am - 4.30pm each day


An in-depth covering all the basics of working with sugar paste that
is a great introduction to cake decoration.

The November 2010 and March 2011 five-day courses will incorporate the
25hour PME Module 1, which concentrates on sugar paste.
This covers the basic techniques of working and handling sugar paste
including; coating a cake, crimping and embossing, creating fabric effects,
incorporating textures, drapes, garet frills, ribbons and bows and sugar embroidery.
You will learn how to correctly stack cakes, including the design and handling of them.
The module also covers basic business guidlines including copyright & licence
relating to creating cakes.

In addition to this you will learn the techniques of creating shaped cakes,
such as 3-D children's characters, handbags or cars. This will include carving,
layering and shaping the cakes and the best techniques for adding sugar
details to create more realistic effects.
we will also teach you the skills of sugar modelling, where you will learn how
to create a range of different popular characters, animals and decorations.
By learning about proportions and the correct methods for modelling, you will
be able to transfer the skills learned to any sugar models.

The July 2011 course will incorporate the PME Sugar Flowers Module instead
of the Sugar Paste Module. You will still learn the basics of handeling and
working with sugar paste and the modelling and creating shaped cakes elements,
but you 25 hours of the course will concentrate on creating sugar flowers.
The areas covered will include: basic techniques of sugar flower making, unwired
and wired flowers, fantasy flowers, roses, orchids, lillies, cherry blossom,
freesia etc. You will make seasonal flowers and learn about alternatives to
sugar flowers, how to arrange sugar flowers, decorating cake stands and knives
costing and pricing.

You will be presented with a PME certificate on completion of this course -
which is a recognised qualification.

PME Professional Diploma Courses

We are pleased to be able to offer a range of new sugar craft courses.
The courses have been developed by PME and are taught by one of our
senior cake decorators. The PME Professional Diploma has been
specifically designed to help students develop their own cake decorating
skills and ideas and for many this additional confidence provides the
opportunities to decorate cakes as a business.

We are currently offering 3 different modules - Sugar paste,
Sugar Flowers and royal icing and piping.


Each module is a stand alone course and on completion you will be
awarded a PME Diploma. During each lesson your teacher will
demonstrate and explain a wide range of techniques and ideas.
As your interest and confidence grows the opportunities for creating,
developing and personalising designs are endless.

All students will be required to provide their own cake decorating tools
and equipment. If you require any tools, they can be purchased from
us prior to course commencement. A required tools and equipment
list will be supplied when you book.

This course focuses on the pleasures of home baking with a mouth-watering
selection of tea time temptations. You will spend the day creating a delightful
array of goodies, including carrot cake, butter shortbread, baked egg custard
and coconut tart, all to take home.

Whether you want to build on your existing skills or gain new knowledge,
this course explores the artistry of patisserie.
Covering each step from baking to finishing, you will learn how to make
a variety of delicious creations including: strawberry roulade, linzer slice,
fresh fruit tart with creme patisserie and pavalovas.

Wine Tasting Evenings
Cost £30 per person inclusive of all wines and supper


A thoroughly enjoyable evening, involving fine wine and a delicious
hot supper - what could be more relaxing! Come and join us and our
wine expert for an informative yet light-hearted look at wines. The
wine expert will take you through at leat 10 different wines from our
chosen country, telling you about each one, the vineyard that produced
it and their recommendations for how to best serve and enjoy that wine.
They will also give you a background of the producing country and the
qualities of the wines from its regions. While enjoying your hot supper
you will be able to choose your favourite wine of the evening
to accompany your meal.

If you have found a new favourite, you are able to purchase or order
any of the wines you tasted at the end of the evening.

Our wine tasting evening are hosted by Stuart Rothwell, the owner of
Vineyard, a fine wine specialist shop located in Ramsbottom.

that we offer - the ideal informative yet enjoyable outing for
social groups! Learn the history of the family business as
John Slattery takes you through how it started, how we've
grown, the moves taken place and plans for the future.
A delicious afternoon tea, comprising of sandwich selection,
crisps, mini scones and cakes follow.

Why noy make the afternoon a little longer and have
a demonstration as well as learning the history of the
family business. John Slattery will talk you through how
the business has developed over the years, as well as
future plans etc. This will then be followed by a half hour
demonstration on chocolate work - providing you with an
insight into how all our speciality chocolates are created.
A delicious afternoon tea, comprising of sandwich selection,
crisps, mini scones and cakes follow and each attendee will
get a delicious box of our handmade chocolates to
take home with them.
