Chocolate Courses
Essential Skills for Working with Chocolate 2 Day Course
Cost £325 Time 9am - 4pm
Our longest running and most popular course! This is an interesting
and information packed course designed specifically for anyone
wishing to start a small chocolate business and learn the fundamentals
of working with chocolate.
An introduction will cover the history and proccess involved in the
production of chocolate, as well as the theory and science
behind tempering - the most inportant skill to master. You will
then learn and practise the different ways to temper chocolate
by hand and also different types of machine tempering and how
to correctly handle chocolate and the different techniques
for working with it.
Through demonstration and lots of hands-on practise this
course will teach you how to:
* Make a selection of different flavoured soft centres
* Make flavoured ganache
* Produce moulded chocolates and create a range of truffles
* Use moulds to make novelty figures and decorations
* Work with coloured chocolates
* Produce a range of hand dipped items
The course will also briefly discuss packaging, machinery
and some of the legal requirements for making
and selling chocolates.

Advanced Skills for working with chocolate - 1 Day Course
Cost £175 Time 9.am - 4.pm
This is the perfect follow on course for those people wanting to expand
their knowledge and product range.
Covering an array of additional products and flavour combinations this
course will provide you with the skills and know-how to be able to create
a vast range of chocolate items. You will produce hand piped and
decorative lollipops, flavoured bars, dipped chocolate novelties and
snobinettes as well as other core products which can be altered and adopted
to suite any occasion.
This course will provide you with skills and confidence to be able to develop
your range and to experiment with flavours and textures.

Chocolate Wedding and Celebration Cakes 1 Day Course
Cost £170 Time 9am - 4pm
Another very popular course! Currently we take more orders for chocolate cakes
than traditional iced styles and the popularity of this style of cake shows no signs
of slowing down! With the demand so high for chocolate cakes it is important
to possess the skills to be able to create these stunning designs.
This course covers many aspects of creating chocolate cakes that can be used for
weddings and celebrations. You will learn how to create a coating sauce and the
correct way to coat a cake as well as the following styles of decoration:
* Chocolate curls and 'cigarillos'
* Chocolate fans and ruffles
* Coloured chocolate pieces
You will also learn how to create coloured cocoa butter and how this can be used
to make decorative and personalised decorations. The day finishes with the chance
to experiment with all the techniques you have learned and create your own
unique and personalised cake. With the skills gained on this course you will be
able to alter and adapt the designs to create your own range of exciting and
unique chocolate cakes.

Advanced Chocolate Wedding Cake 2 Day Course
Cost £305 Time 9am - 4pm
Following on from the one day chocolate wedding and celebration cake course,
or for the more confident student, this course introduces you to the more
advanced techniques in chocolate cake decoration. This will include coloured
cocoa butter spraying, chocolate spraying and creating shaped decorative
chocolate pieces - such as patterned and textured shards. You will use molds
to make pieces anddecorations to use on your cake.
This course will show you how to create the 'non traditional' chocolate designs
such as cone shaped cakes and very modern designs. you will leave the course
with the confidence and knowledge to create a range of different and unusual
cake designs that could be used for weddings as well as many other occasions.
The latter part of the second day is spent creating your own wedding cake
using the techniques and decorations you have learned during the day and
a coned shaped cake. The design is totally up to you, bu the tutor will be
on hand through out to offer advice and help.
This course does not cover tempering in full, so it is advisable that you have
previous knowledge of this skill.

Chocolate Shoe Making
Cost £150 Time 9.30am -3.30pm
Chocolate shoes have been one of the most successful introductions
in our shop in recent months. During this six hour workshop, you will
learn how to create and decorate these popular items. You will use
moulds to create the shoes and learn a variety of techniques including
piping and use of colour and luster effects. you will be able to make
two pairs of ladies shoes, completely finished, to give as gifts....

Baking & Creating Chocolate Desserts - 1 Day Course
Cost £175.00 Time 9am - 4pm
Join us for a full day of creating delicious chocolate based hot and cold desserts
and puddings. You will create a number of different desserts including chocolate
fondants, baked cheesecakes and tarts. You will learn how to create
chocolate cups and a range of fillings for them, including fresh cream mousses.
As well as some large desserts, this course will cover individual versions that
could be used to create an attractive centre piece for a wedding party.
This course will also cover how to make different chocolate garnishes and
decoration pieces to dress your new creations with and give them the
'wow factor'!

Chocolate Modelling & Showpiece Course - 2 Day Course
Cost £345 Time 9am - 4pm
On this advanced course you will, with help and guidance produce a stunning
chocolate centre pieces designed to show off all of your skills.
Techniques that will be used include;
* Making stencils and the use of templates
* Casting into tubes and moulds
* Spraying cocoa butter in various colours to add depth and interest to the chocolate
* The use of moulds
* How to make gelatine / rubber moulds
* Creating chocolate flowers, with individually made petals
At the end of the 2 days you will have created a decorative showpiece, which
would be perfect to display in a shop window, at wedding receptions or on
a buffet table at a special occasion. This course does not include tempering,
so prior knowledge of this skill is required.

also decorate a small chocolate cake will chocolate decoration

Childrens Chocolate Workshop 3.5 hour course

These three hour sessions are designed for children aged 8 to 16. During these
fun yet imformative chocolate workshops, the children will learn how to handle
chocolate and create a large amount of different products. These courses do
get booked very quickly so we would recommend booking early to avoid disappointment.
This fun workshop is perfect for little chocoholics who want to make chocolate
treats for family and friends or just for themselves!! Items created during this
workshop include a range of hand piped chocolates, a decorative chocolate figure

The Essential Slattery Chocolate Experience
Cost £775.00 Time 8:30am - 4pm
We have received lots and lots of requests for a more in-depth
chocolate courseand so here it is.... The Essential Chocolate
Experience - a 5 day course of nothing but working with chocolate.
This course will ideally suit the person with little or no experience
of working with chocolate, as it will start from the very basics.
You will learn how to correctly temper the chocolate using a
variety of different methods, you will come familiar with the ways
to handle and work with chocolate as well as receiving 'Tips & Hints'
on quicker, tried and tested methods that the professionals use.
The course will allow you to gain hands on experience of working
with moulds in order to create small moulded chocolates as well
as larger chocolate figurines and decoration pieces. You will create
a range of fillings including ganaches and fondants as well as
pralines etc.
The course will cover making a large variety of hand-finished
chocolates including truffles, rochas, pretzels, knackerli and
hand dipped pralines, which are all quick and easy to produce
- when you know how!
You will refine your skills and learn about creating chocolates
using more delicate and unusual flavours. Imagine being able to
use herbs and spices to create exotic tasting chocolates
including coriander, lavender, cardamom, juniper and even curry.
One of the most important things you will learn is how to create
individual and personalised chocolates - a must if you intend to set
up in a professional business.
We will devote a good amount of time to the cutting, shaping
and creation of chocolate cakes and decoration pieces. You will
learn how to coat cakes with chocolate and coating sauces that
could be used for birthdays, weddings, or simply as an
extravagant dessert. By the end of the course you will be able
to create chocolate "cigarillo" curls, ruffles, shards and fans
- all of which can be used to create elaboratley
decorative cakes or can be used as decoration on tortes and gateaux.
By learning how to colour cocoa butter and spray chocolate you will
be able to achieve highly unusual and striking effects.
Some tome will be devoted to the fundamentals of running a
successful chocolate business. This will cover packaging ideas and
sources, legal requirements for labelling and selling products as
well as getting the most from your products by learning
effective display methods.
By covering elements from all our popular chocolate courses you
will take away a rounded working knowledge of chocolate. You will
also learn techniques and receive information on ideas that are
not covered on any of our other courses - so this really is the course
for anyone who is serious about working with chocolate.

Advanced Sugar Craft Skills 2 day Course

This is the ideal follow on course from the Essential Sugar Craft Skills Course or
for the more confident cake decorator who already, possess some experience
of working with sugar paste and cake decorating.
This course will provide you with skills to confidently cut, fill, layer and smoothly
cover two cakes. You will then be taught the correct techniques for stacking these
to create a modern 2 tier design that can be used for celebration and weddinjg cakes.
You will then learn how to produce a wide range of decorations and finishes
for your cake that will include;
* Sugar swags, drapes and bows
* Garret frills
* Pearlized, lusterd and textured decorations
* Decorative piping techniques including basic lettering

Novelty Character Modelling 1 Day Course
Cost £160 Time 9am - 5pm
This course provides a great introduction to the techniques and methods for
creating sugar paste models, which are the perfect decorations for many
different style cakes.
Learn how to correctly handle sugar modelling paste, use brushes to successfully
blend and assemble your models and how to use modelling tools to add
details to them.
You will create several popular children's character models and learn how to
improve the look of your characters by placing them in a scene and adding
the details that 'bring them to life'. Once you have mastered the skills for
assembling models using the correct order and techniques, you will be able
to apply the skills to any style of character.

Human Figures - 2 Day Course
Cost £285 Time 9am - 5pm
This 2 day session offers an in depth introduction to creating
'caricature' and 'moulded' human figures. Your expert cake
decorator will take you through creating all different styles of
human figures. You will learn how to create seated figures,
standing figures and creating realistically posed figures too.
If you have tried, you will know that it is quite difficult to make
your figures look the correct age. This course will take you through
creating babies, toddlers, children and adults of various ages,
showing you the tricks used to age them accordingly.
You will be shown how to give your characters poses and
expressions and how to add life to your figures by creating
realistic looking clothing.
This is a great course to really allow you to practice creating
figures while getting lots of tips and advice from our expert
cake decorator. You will leave this course feeling confident that
you will be able to create realistic figures for your customers cakes.

Creating Shaped Cakes - 1 Day Course
Cost £160.00 Time 9.00am - 5.00pm
Take the worry out of creating shaped cakes as we take you through
the whole process, starting with cutting, carving and layering your
sponge cake. We will show you how to add features and details in sugar
and the correct way to assemble the cakes.
Your cake decorating tutor will also offer 'top tips' on decorating the
cakes in order to achieve the best, most realistic results.
During this hands on course you will create your own shaped cake from
start to finish, with expert guidance.
We will cover making popular children's character shaped cakes on the
May 2010 and January 2011 courses. You will be shown the basics of
shapong the body and head of the characters and then will be given the
choice of different characters to create. You will be taken through step-by-step,
until you have a perfect 3-D shaped character cake.
The September 2010 and March 2011 course will focus on creating
handbag shaped cakes. This is a style of cake that is incredibly popular and
once you have mastered the basic shaping and decorating skills,
you will be able to create a whole range of different handbags designs.
On the December 2010 and June 2011 course the focus will be on creating
realistic and detailed car shaped cakes. This too is an incredibly versatile and
popular shape of cake that is suitable for children and adults alike.

Creative Cup Cakes 1 Day Course

Cup cake are one of the most popular trends of the last couple of years,
but what makes cup cakes so popular? Thye make the perfect dessert,
they are small emough to eat by yourself but big enough to satisfy
a craving for something sweet. They can be plain or fancy, casual or formal,
crazy coloured or pristine white. Perhaps it is the versitility of a plate
of cup cakes. Suitable for a midmorning coffee break, birthday party
or even a wedding reception, cup cakes are always welcome.
On this course you will learn how to bake a range of different cup cake
bases and create some with soft centre fillings. You will make differnt
frosting and icing finsihes and make additional edible decorations so you
will be able to produce a variety of cup cakes for any occasion.

Essential Sugar Craft Experience - 5 Day Course

A new in-depth 5 day course designed to provide the perfect introduction,
to cake decoration, taking you right from the basics through to wedding
style cake, shaped novelty cakes and character modelling.
Starting from the basics, you will learn how to cut, fill and layer two
sponge cakes. you will be taught how to handle sugar paste and will
cover your two cakes, achieving a smooth and even finish - the foundations
of any successful cake design. You will then be taught the correct techniques
for stacking these to create a modern tow-tier design that can be used
for celebration and wedding cakes. Our expert cake decorator will take
you through a variety of decorative that include:

you how to use it to make models. These will include a caricature human
figure model as well novelty characters and animals. By learning about

We will also spend time covering the techniques for creating a novelty
shaped cake. Once you have cut and shaped your cake, you will learn
how to assemble and decorate it to create a 3-D sat up character. our
expert tutor will teach you how to dress your character, give it the correct
facial expressions and how to use the sugar paste the bring your characters to life.
This course will equip you with the skills and knowledge to create a wide range
of celebration cake designs - that can be used for birthdays, Christenings,
weddings and many other occasions. With practice you will be able to build on
these skills to create additional designs and styles and feel confident in
your ability to tackle any sort of cake style.

PME Professional Diploma Courses
We are pleased to be able to offer a range of new sugar craft courses.
The courses have been developed by PME and are taught by one of our
senior cake decorators. The PME Professional Diploma has been
specifically designed to help students develop their own cake decorating
skills and ideas and for many this additional confidence provides the
opportunities to decorate cakes as a business.
We are currently offering 3 different modules - Sugar paste,
Sugar Flowers and royal icing and piping.
Each module is a stand alone course and on completion you will be
awarded a PME Diploma. During each lesson your teacher will
demonstrate and explain a wide range of techniques and ideas.
As your interest and confidence grows the opportunities for creating,
developing and personalising designs are endless.
All students will be required to provide their own cake decorating tools
and equipment. If you require any tools, they can be purchased from
us prior to course commencement. A required tools and equipment
list will be supplied when you book.

Essential Baking Skills

This hands-on baking course will provide you with the skills to confidently
make consistently delicious sponge cakes, pastries, and biscuits - the
essentials for any baker.
You will create vanilla and chocolate sponges that have multiple uses,
whether as a base for birthday or celebration cakes, as part of a
delicious dessert or even as cup cakes
You will learn the secret of making sweet pastry, which will be used to
make tart and pastry cases, pies and flans.
We will also teach you the secrets of making delicious biscuits that can
be altered and adopted to suit any flavour addition and can be used
for many occasions.
You will make and take home a wide selection of items that will be finished
in many different ways to give you lots of ideas and inspiration to create

Patisserie Passion 1 Day Course

Bread Making for Beginners 1 Day Course
Cost £165 Time 9.00am - 4.00pm
There is a real sense of achievement in making your own bread. During this
course you will acquire the skills and basic techniques involved in bread making
and create Manchester cobs, Irish soda farl, barm cakes, fruit tea bread
and other yeasted goodies.
You will be amazed at the variety and quality of the baked goods you will be able
to create in this class, You will leave with the skills and confidence to create a
great standard of bread and baked goods at home.

During this demonstration you will be shown many ideas for creating a delicious
range of desserts that you can make at home.

Wine Tasting Evenings
Cost £30 per person inclusive of all wines and supper
A thoroughly enjoyable evening, involving fine wine and a delicious
hot supper - what could be more relaxing! Come and join us and our
wine expert for an informative yet light-hearted look at wines. The
wine expert will take you through at leat 10 different wines from our
chosen country, telling you about each one, the vineyard that produced
it and their recommendations for how to best serve and enjoy that wine.
They will also give you a background of the producing country and the
qualities of the wines from its regions. While enjoying your hot supper
you will be able to choose your favourite wine of the evening
to accompany your meal.
If you have found a new favourite, you are able to purchase or order
any of the wines you tasted at the end of the evening.
Our wine tasting evening are hosted by Stuart Rothwell, the owner of
Vineyard, a fine wine specialist shop located in Ramsbottom.

This is proving to be one of the most popular afternoon events
that we offer - the ideal informative yet enjoyable outing for
social groups! Learn the history of the family business as
John Slattery takes you through how it started, how we've
grown, the moves taken place and plans for the future.
A delicious afternoon tea, comprising of sandwich selection,
crisps, mini scones and cakes follow.

Afternoon Tea, Talk and Demonstration

Why noy make the afternoon a little longer and have
a demonstration as well as learning the history of the
family business. John Slattery will talk you through how
the business has developed over the years, as well as
future plans etc. This will then be followed by a half hour
demonstration on chocolate work - providing you with an
insight into how all our speciality chocolates are created.
A delicious afternoon tea, comprising of sandwich selection,
crisps, mini scones and cakes follow and each attendee will
get a delicious box of our handmade chocolates to
take home with them.

Alternatively we can transfer the deposit onto the next available date.
Between 7 - 14 days notice 50% refund less a cancellation fee of £25.00.
If we are able to fill the place, 100% refund less £25.00. Alternatively
we can transfer the monies onto the next available date. Less than 6 days
notice: No refund available unless we are able to fill the place in which
case you will receive 100% refund less a cancellation fee of £25.00.
If a refund is applicable it will be made in the way the original balance was paid
i.e. By card, cash, cheque or gift voucher
